From our kitchen to your’s, Sup! is bringing back the 12 Days of Christmas Cookies! For the next 12 days we will share a cookie recipe from a different country. For day 1, we head to Australia and New Zealand to make ANZAC Biscuits. These cookies will last all season long. In fact, they were invented for soldiers during WWI specifically because the ingredients will not spoil. ANZAC biscuits became to Australia and New Zealand what chocolate chip cookies are to Americans. Thank you to www.Christmas-cookies.com for the recipe.

Ingredients: 1 cup rolled oats 1 cup plain flour 1/2 cup sugar 3/4 cup dessicated coconut 2 tablespoons golden syrup 1/2 cup butter 1/2 teaspoon bicarbonate of soda 1 tablespoon boiling water

Directions: Mix oats, flour, sugar and coconut. Melt syrup and butter together. Mix soda with boiling water and add to melted butter and syrup, add to dry ingredients. Place teaspoonfuls of mixture well spaced on a greased baking sheet. Bake at 300 F for 20 minutes.
