In Ecuador they like to add chicken, pork or prawns, but today we will giving it a vegetarian/High Andean twist. We will be combining veggies, rice and the infamous grain, quinoa. Quinoa (keen-wah) is a grain that flourishes in the Andes Mountains of Peru, Bolivia and Ecuador. It is an ancient seed grain that has been harvested for over 7,000 years.
